The Story
A 5th generation Burgundian domaine owns about 8ha in the Côte de Beaune across a variety of communes.
Winemaking
The domaine's vines are located in Trois Follots, located in the prolongation of 1er Cru Rugiens, on well draining clay-limestone soils with limestone scree. Sorted twice, 100% de-stemmed, indigenous yeasts, cuvaison lasts about 15 days with mostly pump-overs and very limited punch-downs. Aged in barrel (15 to 20% new) and bottled after 15 to 18 months. All cellar work follows the lunar calendar.
Tasting Notes
The "Les Trois Follots" wine is classic Pommard in style, displaying structured red berry and black cherry fruit notes along with subtle earthy flavors including forest floor, underbrush, mushroom, smoke, and hints of oak.
