2024 El Chivo Cabernet Sauvignon

The Place

Sourced from the Central Chilean Valley at the foot of the Andes Mountain range. Here, the soils are diverse with the presence of sandy, clay-chalky and stoney soil.

Winemaking

The grapes are harvested at optimal maturity, destemmed, crushed and fermented for 12 days at a controlled temperature of approximately 30°C and then gently pressed off the skins. The wine is then racked and transferred over to vats for ageing.

Tasting Notes

The wine pours a dark ruby colour with intense purple reflections. The nose features oak spice, deep fruit notes of cherries, blackberries and subtle green pepper. The flavours match the aromas end in a round, lingering, structured red wine.
