The Place

Founded in 1848 through the marriage of Symphorien Moillard and Marguerite Grivot, Moillard-Grivot is an iconic wine house based in the Côte de Nuits, Burgundy.

This particular vineyard is located in northern Burgundy near Auxerre, in the renowned Chablis region. The Chablis vineyards stretch along the gently flowing Serein River, aptly named for its serene character. The landscape is defined by a limestone plateau cut through by a network of valleys.

The vineyards are rooted in soils that date back to the Kimmeridgian period, approximately 155 million years ago. These ancient geological formations consist of alternating layers of marl and limestone, rich with tiny fossilized oyster shells—lasting traces of the warm, shallow sea that once covered this part of Burgundy. These unique soils are key to the distinctive minerality and elegance of Chablis wines.

Winemaking

The grapes are pressed immediately upon arrival at the winery using pneumatic presses. After settling and cold storage for 48 hours, fermentation takes place in thermo-regulated stainless steel vats at 16–20°C to preserve the wine’s aromatic freshness.

Ageing occurs in stainless steel vats on the total lees for 8 to 10 months, with regular stirring (bâtonnage) to enhance depth and complexity.

Tasting Notes

Bright pale yellow in colour, the wine reveals an open and expressive bouquet of white fruits with a pleasant minerality that adds complexity. On the palate, it is well-balanced, finishing fresh with lively lemon flavours.
