The Story
The volcanic soils, the sunlight and a continental climate characterized by very cold winters and scorching hot summers, punctuate the rhythms of the special Vulture region. A unique terroir in the Mediterranean sphere gives birth to unique wines, with strong mineral character and spicy touches.
Winemaking
Manual harvest takes place in the second half of October, followed by berry selection on the sorting table. After the harvest, the grapes are destemmed and cooled in stainless steel vats at 10C for 24 hours in order to fix and enhance the aromatic structure. Then the wine undergoes maceration on the skins for 7-8 days at controlled temperature, with repeated pump overs operations. At completion of the spontaneous malolactic fermentation the wine starts its aging in oak for 15 months in French barriques; followed by 4 months in bottle.
Tasting Notes
Dark, deep ruby colour with vivid purple reflexes. Deep and rich aromas of bitter cherry, sweet spices and balsamic notes. Excellent structure, well balanced with soft tannins and good persistence.
