The Story
From a single-vineyard in Provence-Alpes-Côte d'Azur, France at the foothills of the St. Victoire Mountains. It is protected by rows of tall trees whilst streams meander between them and through the vineyards. The exceptional terroir is located 350m above sea level in deep limestone and clay-sandstone soils as well as deep soils composed of ancient alluvial deposits with small stones, excellent for the production of great wines.
Winemaking
The grapes are harvested at night ensuring cooler temperatures to preserve freshness and primary flavours. The juice is protected from oxidization throughout the whole process by a blanket of inert gas applied during pneumatic pressing. A careful selection and cold clarification is carried out over the next 48 hours. Each variety is fermented separately at 17°C, and stored in stainless steel vats on the finer lees for 2 months to add mouth-feel.
Tasting Notes
Fresh and appealing, this lychee coloured wine offers white flowers and red berries on the nose with a hint of grapefruit. The flavours are complex, dominated by ripe tropical fruits and balanced by a lovely mineral structure. True Provençal style rose.
